- For the first day of class, have a knife set consisting of an 8, 10 or 12-inch chefs knife, a boning knife, a paring knife, 0 to 220 F instant-read self calibrating thermometer, tongs, vegetable peeler, sharpening steel, bench scraper plastic or metal and a knife roll bag. Bargreen Ellison/American Restaurant Supply in Kailua Kona, phone 327-1635, has a knife and utensil set for about $138, and Chef Works has a larger set for $145 plus shipping.
- For the first day of class, have two sets of white chefs’ long sleeve jackets with the CIP logo and your name embroidered on left side. Solid, striped or checked dark pants, two white aprons, and a white chefs’ hat are necessary. Your leather or leather-like shoes should be sturdy, covered, comfortable and skid resistant. You may order online by going to Chef Works at www.chefworks.com or calling 800-372-6621 ext 239, or locally at Mona-grams in Kailua Kona 329-3897.
- For the first day of class bring a large 3-ring loose-leaf binder and paper, pen and pencil, a small calculator, and a calendar.
- For the first day of class bring the required books. Early ordering insures that you will have your books on time. Review your class registration to insure you are in the required classes. Check with Student Services at 322-4856 if you have any questions.
